Kathryn Hawkins’ cookbook, Crepes, Waffles, & Pancakes is a delicious treat. There are so many different
variations to make, this cookbook should be a staple in any cook’s collection. I couldn’t believe the history she
includes, or the different ways pancakes or the like are enjoyed around the world. Then there are all of the mouth
watering recipes. Wow, the variety, from sweet to savory. So many too choose from! This cookbook features recipes
for Breakfast & Brunch, Main Meals, Specialty, Desserts, Snacks and Accompaniments.
I was able to make the Mini Pancake Hot Dogs from the Snack section. These were delicious! In reality, they are
dressed up "pigs in a blanket". The something special are the onions, made golden brown in a half stick of butter,
that are the topping to pork sausages, wrapped in a delicious pancake. Yum!
My family loves most things citrus, orange especially. I made the Orange Juice Pancakes from the Breakfast and
Brunch section. Instead of using milk in the batter, fresh orange juice is put in its place. These special pancakes
are then topped with a chilled grapefruit and orange fruit salad. These were light and delicious, a great alternative
to the hearty breakfast.
I wish I could list all of the absolutely innovative recipes Hawkins has included in this book. I think this book
would make a perfect gift for anyone who is in love with crepes, waffles, and pancakes or someone heading out on their
own. This cookbook really opened my eyes to the possibilities of different batters and ingredients. It will have a
standing place on my cookbook shelf. |
