Rustie Lee - A Taste of the Caribbean is a marvelous cookbook filled with exotic recipes for an adventure in
cooking with a Caribbean flair. If you have missed Rustie's robust laugh on television cooking shows, well, she is
still around, and she's been hard at work on her latest project, a recipe book and accompanying DVD. The DVD shows
us just how to make some of her favorite recipes including ackee and saltfish, jerk chicken and her wonderful
Caribbean Christmas cake with lots of rum.
The cookbook is a visual feast with Caribbean scenes and lip-smacking food photos. I tried Chicken Pupa-Lickie,
and oh, boy, was it ever good. The batter that the chicken is coated in contains canned corn...I used cream style,
though the recipe didn't specify that.
Some of the recipes call for ingredients that just aren't available in my local Kenai, Alaska supermarket, but
most call for items that are readily available anywhere. Neither ackee nor saltfish were available, but most of the
tropical fruits are easy to find. Your next dinner party or barbeque is sure to be a hit with some of these exotic
recipes. Make your own Jamaican Jerk spice with Rustie's recipe and then try Jerk Chicken...follow the main course
with a slice of Rustie's wonderful Caribbean Layer Cake and a Pina Banana to sip.
I love trying new recipes, and this beautiful, spiral bound book will make me the envy of all my friends and
allow me to give them some new dining experiences. |
