The sixth book in author Susie Fishbein's "Kosher by Design" series, Kosher by Design Lightens Up offers
healthier alternatives for people who love food. Although the kosher aspect of the book involves not mixing milk
and meat products together at a meal and not eating particular foods such as pork and shellfish, the book has an
exotic, international, gourmet appeal for any cook who wants to lighten up at mealtime while creating many
flavorful foods.
The book contains more than 140 new recipes accompanied by color photographs of the prepared foods and their
serving suggestions. Fishbein’s approach to healthy eating involves taking small steps in adjusting diets. She
substitutes lower-fat, lower-calorie ingredients, but encourages heavy use of spices to add flavor to each
recipe. For instance, she doesn’t just list paprika as an ingredient in the Tex-Mex Turkey Meatballs, but
mentions that the spice originated in Hungary, contains Vitamin C, normalizes stomach acid, and regulates
blood pressure. Helpful hints about ingredients, health, and nutrition appear in the front matter of the book
in addition to being scattered throughout the recipe introductions.
Recipes include appetizers, soups, salads, poultry, meat, fish, eggs, pasta, dairy, side dishes, and
desserts. Although the recipe selections mix ingredients in unusual ways to create new flavor combinations
(such as Teriyaki Butternut Squash Rounds and Salmon Salad with Carrot-Ginger Dressing), for the most part the
ingredients are easily obtainable and the preparation time is minimum. Fishbein includes tips for entertaining;
suggestions for table settings; ideas for healthier and more efficient ways to eat, shop, and cook; a glossary;
and a cross-referenced index. An attractive and useful book, Kosher by Design Lightens Up offers something
new in the author’s series and provides terrific ideas for health-conscious cooks of every denomination. |
