Knowing someone
with Celiac Disease is what attracted me to this book. I also remember
my late father-in-law complaining about his limited choices because
of diabetes
I wish I had understood both health issues sooner.
But this book isn't just for those suffering health issues. These
recipes are for the young and old. What better way to teach your
kids / grandkids about a healthier life style than with tasty baked
goods. Can you imagine how tasty a cake made from nut flour is compared
to your typical white flour? The further I read the more my mouth
watered.
In the book, the authors mentioned the key ingredients are Nut flours
and splendia or stevia. Sugar substitutes remove the sugar and the
nut flours add flavor. This also removes carbohydrates.
Oh, and please don't skip the Forward or the Authors' Intros. They
have important information about the book's contents and about the
authors. The Forward is by Dr Tom Schneider, who is former military
and suffered extensive health issues. He met Denene Wallace who
fought back from diabetes. Dene and Peter (authors) join forces
with recipes, and Dr Tom now considers this book as a "new
tool."
"The Basics" section discusses ingredients used often
that are unusual, and explains nut/seed flours and equipment needed.
There is also a Pantry section not to be missed. In the recipe section
my favorites are the Basil Pesto recipe, The Focaccia recipes, and
the Biscotti recipe. I also found the Crackers/Preztels recipes
appealing - and they're not even my 'cuppa,' -- my husband likes
them. Remember,
photos are also included. Pictures are by Leo Gong. They move from
how-to to finished product. I think once a person starts baking
with this method they won't go back.
Bakers will enjoy recipes for Bread and Rolls; Pizza & Focaccias;
Crackers, Breadsticks, & Pretzels; Muffins, Scones, Pancakes,
Waffles and other Breakfast treats; Cookies; Brownies, cakes, coffee
cakes and Pies.
